Our Story

  The story of Gluten not Included is a testament to love to my daughter, the preservation of family, and the American dream to start my own business. 

My name Adriana Sandoval, it all started when my daughter was having issues eating. I slowly noticed that her appetite was disappearing and she didn't want to eat anything. I immediately made an appointment where the doctors couldn't find anything they just said she was beginning the first stages of being malnourished. Her stomach started hurting after any food we gave her and that was when I decided to go to have a gastroenterologist find out what was happening. After a couple appointments she was diagnosed with celiac disease. For anyone that docent know it's an autoimmune disease that prohibits the absorption of nutrients and increases the risk of cancer along with other complications. Upon receiving this diagnosis I was destroyed with the fact that I was causing my daughter harm with some of the foods that we fed her. I was hopeful after she was diagnosed but we faced daily challenges in finding gluten free foods that were safe and delicious for her because everything about it was new to me. Over time I realized that there wasn't many options of gluten free foods out there let alone gluten free that tasted good at least. This was all happening when my daughter was in elementary and that meant she was excluded from eating any regular snack. She couldn't eat her other classmates cookie and cupcakes that they would bring to school. So I did as any mother would and started to develop gluten free recipes of my own. The goal was to make it absolutely gluten free and make it delicious enough that she could share it her classmates or anyone so that they wouldn't be able to tell the difference. Over the years I perfected a couple of recipes that I baked regularly for the whole family. When covid happened I had so much time that I started to develop new recipes and that was when I came up with the idea to make a gluten free bakery. I don't want to bore you with all the details but I will mention some of the big points of how we got here so far. The business started as most others I would say, from a commissary kitchen where we would only go to events and farmers markets. It was difficult but a welcomed experience. Once we had enough money saved up we found a local place where I could start my dream bakery! Challenge after challenge  got me here to my own bakery that is family owned with the support from my husband along with my son Cesar and my daughter Isabel. I am incredibly grateful for all the opportunities I have had and the supporting community that has enabled me to come this far! 

My goal is not to just own a local gluten free bakery, but to able to provide gluten free options that kids and adults alike can enjoy in any part of the United States! This comes from my want to make a difference and help other families in similar situations.

On this page there will be any kind of special offer that we have. For example we like to try new recipes all the time. When there is a big batch we share it to the community. Such as a donuts, conches, cinnamon rolls, extra birthday cakes etc. As a Gluten Free company we are always growing as well as learning!
